- Preheat oven to 170 degrees C.
- Combine apples, coconut sugar, lemon juice, cinnamon and vanilla in a large mixing bowl.
- Transfer to oven-proof dishes and bake for approx. 10 minutes.
- Meanwhile, combine all crumble ingredients in a mixing bowl, mix well.
- Spoon the crumble mixture over the apples and return to the oven for approx. 30 minutes or until the crumble is golden and apples are well cooked.
- Allow to cool slightly, serve and enjoy. We recommend serving with a dollop of coconut yoghurt.
