Peanut-Crusted Chocolate Fudge Balls

Ingredients

  • 200g dates, soaked in hot water for half an hour and drained
  • 250g roasted peanuts
  • 100g coconut oil, melted
  • 75g Pic’s Peanut & Chocolate Butter
  • 25g cocoa powder
  • ¼ tsp salt

Directions

1. Add 100g roasted peanuts to a food processor and blitz until a breadcrumb consistency. Transfer to a bowl and set aside.

2. Add remaining 150g peanuts to the food processor and process for 1-2 minutes until a coarse flour. Add dates and coconut oil, and process until a paste. Finally add Peanut & Chocolate Butter, cocoa powder and salt and pulse, adding 1-2 tbsp water as needed, until the mixture comes together.

3. Roll into balls roughly ¼ cup each. Roll each ball in the peanut “breadcrumbs” you set aside earlier, and transfer to a plate. Refrigerate for 30 minutes until firm.

4. Enjoy! Store leftovers in the fridge.
