1. Put all the ingredients into a food processor and process until thoroughly combined. It's helpful to pulse in the cacao nibs, and the dough should be sticky when pressed between your fingers.
2. If your dough isn't sticky enough to shape into balls, add a small amount of water, a teaspoon at a time, and process until it comes together.

3. Freeze for 20 minutes or so until firm. Store leftovers in the freezer - or until your next craving!
