White Chocolate Dipped Christmas Cookies

Ingredients

  • 1 1/4c plain flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 1/2 tsp mixed spice
  • 85g butter, melted
  • 2/3c brown sugar
  • 1/4c white sugar
  • 1 egg, room temperature
  • 1 egg yolk, room temperature
  • 1/2c Pics smooth peanut butter
  • 2 tsp vanilla essence
  • Topping:
  • 150g white chocolate chips
  • Christmas coloured sprinkles

Directions

  1. Preheat oven to 180°C. Line a baking tray with baking paper.
  2. In a large bowl, whisk all the dry ingredients together.
  3. In a separate bowl, beat together the butter, peanut butter and brown and white sugar until light and fluffy.
  4. Add in the egg, egg yolk and vanilla essence and continue beating until combined.
  5. Fold in the dry ingredients and mix until just combined.
  6. Cover and refrigerate the dough for 15-20 minutes.
  7. Scoop the dough into balls, flatten slightly and place on the baking tray.
  8. Bake the cookies for 8-10 minutes or until golden. The cookies will harden as they cool.
  9. Place the cookies on a wire rack to cool and harden.
  10. Melt the chocolate in a microwave safe bowl and dip half the cookies in the chocolate. Top with sprinkles and let it sit and harden.
