G'day Peanut Butterer
Ingredients
- 1 1/4c plain flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1 1/2 tsp mixed spice
- 85g butter, melted
- 2/3c brown sugar
- 1/4c white sugar
- 1 egg, room temperature
- 1 egg yolk, room temperature
- 1/2c Pics smooth peanut butter
- 2 tsp vanilla essence
- Topping:
- 150g white chocolate chips
- Christmas coloured sprinkles
Directions
- Preheat oven to 180°C. Line a baking tray with baking paper.
- In a large bowl, whisk all the dry ingredients together.
- In a separate bowl, beat together the butter, peanut butter and brown and white sugar until light and fluffy.
- Add in the egg, egg yolk and vanilla essence and continue beating until combined.
- Fold in the dry ingredients and mix until just combined.
- Cover and refrigerate the dough for 15-20 minutes.
- Scoop the dough into balls, flatten slightly and place on the baking tray.
- Bake the cookies for 8-10 minutes or until golden. The cookies will harden as they cool.
- Place the cookies on a wire rack to cool and harden.
- Melt the chocolate in a microwave safe bowl and dip half the cookies in the chocolate. Top with sprinkles and let it sit and harden.
