Choc Chip Chickpea Cookies

Ingredients

  • 400 grams cooked chickpeas
  • 1/4 cup Pic’s Smooth Peanut Butter
  • 2 Tbsp hulled tahini
  • 1/3 cup coconut sugar
  • 2 tsp vanilla essence
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 100 grams roughly chopped dark chocolate

Directions

1. Preheat oven to 180°C
2. Place all ingredients (except chocolate) in a high-power blender, blend until smooth
3. Gently fold chocolate into blended cookie dough
4. Roll into balls and arrange on a baking sheet
5. Place in the oven and bake for 15 minutes
6. Allow to cool slightly, serve and enjoy!
